Here’s another idea for your Thanksgiving turkey and I did this one myself for Thanksgiving 09 and will probably always do turkeys this way. A big turkey on the table sure looks nice but a platter of carved turkey looks plenty good enough to me and it allows me to carve before the guest are seated. Since turkey breast always gets done before the rest and since turkey breast are considerably more expensive than whole turkeys, just buy the whole birds and cut the parts off the bird and cook separately. In fact you may not need to cook it at all if you are like we were this Thanksgiving and had more than enough without it. So with the parts ready to cook why not just fry them like chicken. We seasoned them and pan fried them and served them like oversized hot wings fried chicken (turkey) thighs.
